A similar piece of equipment is a retort. Retorts also subject product to heat and pressure. They are industrial pressure cookers. Retorts are often used in the canning industry. Cans are filled with raw food, sealed and then loaded in the retort. There they are subjected to steam under pressure which cooks and sterilizes the food inside the cans, allowing it to have a long shelf life. High speed canning operations use orbital continuous retorts. These are called orbitorts. Retorts can also be used for glass bottles and also plastic pouches and trays. As with autoclaves, retorts come in small lab models and larger industrial models.
